apple ginger cubes

this recipe we (lynn, cheree and me) also made for slow food event “teller statt tonne” with the apples we collected in berlin.

thank you oli for the inspirations and books. i am in love with them!

here the recipe i promise for some visitors last saturday:

from the book”das beste aus meinem garten”


500g apple

500g fresh ginger

2 organic lemon

900g gelling

1. wash and cut the apples and ginger. mix with the lemon and 400g sugar.

2. cook them in the next day. pass thru a sieve.

3. mix the mousse with 500g gelling and cook it again until it is fast. put in a form and wait 2 days until it is firm enough to cut.
