This was one of the recipes we made for the slow food event.

Apple Cocoa Chips- September/October

Recipe adapted from Food 52.


3 firm Apples

2 tablespoons Sugar

1 teaspoon ground Ginger

¾ teaspoon ground Cinnamon

2 Tablespoons Cocoa powder

Preheat oven to 150° (or 275°F if in USA).  Cut each apple in half and scoop out the core. Slice very thinly using a knife or mandoline or side of a box grater. You want them to be approximately less than a cm thick.  Lay them on a rack over a baking sheet lined with parchment paper. Alternatively you can lay them on the baking sheet, but they may get sticky and stuck. Mix the sugar, spices, and cocoa together and sprinkle over the apples. Bake until they are almost dry, turning them over once during the baking to ensure they release the maximum moisture. They are at their peak with crisp edges and slightly chewy centers.
